Ingredients

Prep: 20 minutes. Roast: 2 hours 20 minutes
Serves 4 servings
  1. 3 1/4lbs. pork ribs (about 1.5 kg)
  2. 1/3 cupchopped onion (about 50 grams)
  3. 1 teaspoonchopped oregano
  4. 1 teaspoonchopped rosemary
  5. 2 teaspoonschopped parsley
  6. 3 clovesgarlic, chopped
  7. 1/2 teaspoonground black pepper
  8. 1/2 teaspoonground cumin
  9. 1 1/4 teaspoonscoarse sea salt
  10. 1 teaspoonsmoked paprika
  11. 1/2 teaspoonhot smoked paprika
  12. 1 tablespooncoconut oil or olive oil

Steps

Prep: 20 minutes. Roast: 2 hours 20 minutes

    Pat the ribs dry with paper towels. Use a small, sharp knife to lift the edge of the membrane attached to the bone and pull it off.

    Measure and chop all the ingredients. In a mortar, mash all the ingredients together to form a paste. Add the oil and mix well.

    Rub the marinade all over both sides of the ribs. Refrigerate for about 4 hours. Preheat the oven to 350°F (178°C).

    Place the ribs bone side up on a rack set over a baking sheet. Roast in the center of the oven for 1 hour. Flip the ribs and roast for another 80 minutes. The ribs should be nicely browned. Cut into 4 portions or into individual ribs.
