Whenever possible, I try to use fresh herbs in my cooking. It really makes a difference in flavor.

Pat the ribs dry with paper towels. Use a small, sharp knife to lift the edge of the membrane attached to the bone and pull it off.

Measure and chop all the ingredients. In a mortar, mash all the ingredients together to form a paste. Add the oil and mix well.

Rub the marinade all over both sides of the ribs. Refrigerate for about 4 hours. Preheat the oven to 350°F (178°C).

Place the ribs bone side up on a rack set over a baking sheet. Roast in the center of the oven for 1 hour. Flip the ribs and roast for another 80 minutes. The ribs should be nicely browned. Cut into 4 portions or into individual ribs.
