The forever best canned chickpea falafel with yoghurt sauce and GF flatbread

Ingredients

3 servings
  1. 2 canscanned chickpea or garbanzo bean
  2. 1/2onion chopped finely
  3. 1little bit of fresh parsley
  4. 2clover of garlic finely minced
  5. 1egg add one if too crumbly (or vegan substitute)
  6. 1 tbspcumin
  7. 1 1/2 teaspoonscoriander
  8. 1 1/2 teaspoonsalt
  9. 1 tbsplemon juice
  10. 1 tspbaking powder
  11. pinchblack pepper ground
  12. cayenne pepper to taste
  13. 1 1/3 cupoats or breadcrumbs
  14. tbspavocado oil or more as needed

Cooking Instructions

    Blend the chickpeas and lemon juice in a blender until fairly smooth

    Mix eggs, spices, and baking powder in a bowl and set in the fridge for 5 minutes (no longer or it will be too cold!)

    Mix the egg mixture with the chickpeas and lemon juice and blend for 20 seconds. Transfer to a bowl

    Set mixture in fridge for another 2-5 minutes. Then use your hands (hopefully clean) to mix in the oats or breadcrumbs. it will start to form a dough. once pliable form into tablespoon sized balls, or make 2-3 tablespoon patties.

    Heat a skillet on medium-high heat and place on oil. once oil has reached a "waterey" consistency place the patties/rounds onto the pan and cook until each side is a dark golden brown with a crisp finish. onece both sides are fully cooked transfer to a plate with a lid to keep warm.

    Plate with veggies, flat bread (recipe coming soon) and a yogurt dip(plain yogurt, cumin, salt, pepper, and dill weed) and enjoy!
