  • 1Bitter melon
  • 1egg
  • A fewslices of bacons
  • A fewdry bonito flakes
  • 15 mlsoy sauce
  • 1/4garlic
  • 1/2 boxhard tofu
  • 1 dashcooking sake or white dashi

  1. 1

    Cut the Bitter melon in half. Remove the seeds and internal flesh using a spoon. Chop it into numerous slices. The thinner it is, the less bitter the flavour.

    Dice the garlic

    Use a kitchen paper to dry the moisture of the tofu. Then cut the tofu into small cubes.

    These are all the required ingredients

    Oil on a frying pan. Lightly stir fry the tofu cubes to coat the surfaces with light brown colour. This step further removes extra moisture from the tofu.

    Clean pan again. Add oil. Stir fry the garlic and the bitter melon. Add a pinch of salt for seasoning. After that, add the bacon and continue to stir fry. The fat from the bacon should melts as it cooks.

    Slightly smashed the tofu and add it into the stir fry.

    Add some soy sauce and a dash of cooking sake for seasoning. (Optional: add a dash of white dashi)

    Add the beaten egg and continue to stir fry for around 30 seconds. Do not overcook the egg otherwise it will become dry and give a bad mouthfeel.

    Finally, put some dry bonito flakes on top as garnishing.
