Onion pickle

Today, I decided to try hand at pickling. Though I love a good mango pickle (aam ka achar) I have tried making any kind of achar aka pickle.
This onion pickle is a sort of instant pickle as there is no leaving it out in the sun for days to ripen. The magic of this quick pickle all happens in a frying pan. The sizzling mustard oil tempered with fennel, nigella and cumin seeds is poured over the onions and given a good mix, lastly, squeeze lemon over it and mix and store in the fridge,

Place the onion in a bowl and massage to separate the layers.

Add the green chillies.

In a pan heat mustard oil.

Once hot, add the spices and allow to crackle.

Pour the tempered oil over the onions and mix well.

Squeeze lemon juice and mix well to coat the onions.

Place in an air tight container in the fridge.
