Light Single-Serve Faux Tiramisu

Every day I like to treat myself to something sweet, and to avoid gaining too much weight 🤣 I always try to satisfy my cravings while watching the calories. This single-serve tiramisu is made with crisp toast slices soaked in coffee sweetened with low-calorie drops. For the cream, I used my favorite plain Greek yogurt, added a few drops of sweetener, and shredded coconut. I layered in chopped hazelnuts with each layer and finished with a dusting of unsweetened cocoa powder. It's delicious, fresh, and light.

Brew the espresso coffee, sweeten to taste, and let it cool.

In a bowl, add the Greek yogurt and sweeten with 2 to 3 drops of liquid sweetener (if you prefer, you can use powdered sugar or honey instead).

Add the chia seeds and shredded coconut, mix well, and set aside for a moment.

Place the first slice of crisp toast on a small plate and use a teaspoon to drizzle with the cooled espresso.

Spread a layer of the yogurt cream on top, add some chopped hazelnuts, and cover with the second slice of crisp toast.

Drizzle with more coffee and repeat the layers of yogurt cream and chopped hazelnuts until you use all the toast slices. Cover all sides of the mini tiramisu with the yogurt cream, finish with a layer of yogurt, and dust with a teaspoon of unsweetened cocoa powder. Add more chopped hazelnuts on top. Let it chill in the fridge for a few hours before serving.
