Ingredients

Serves 6 servings
  • 1 lbgrape leaves
  • 1/2 cuprice, soaked for 30 minutes
  • 1 bunchparsley
  • 1medium onion, finely chopped
  • 2tomatoes, chopped
  • 1 1/2 teaspoonssalt
  • 1/2 cuplemon juice
  • 2 tablespoonsolive oil
  • 2 tablespoonschopped fresh mint
  • 1 teaspoonblack pepper
  • 1potato, cut into thick slices

    Boil the grape leaves for 2 minutes.

  2. 2

    In a bowl, combine the rice, parsley, onion, tomatoes, mint, salt, pepper, half the lemon juice, and olive oil. Mix well.

  3. 3

    Stuff the grape leaves with the mixture. Place the potato slices at the bottom of a pot, arrange the stuffed grape leaves on top, and place a heavy plate over them.

  4. 4

    Add 1 cup of water and the remaining lemon juice over the grape leaves.

  5. 5

    Cook the pot over medium heat for 50 minutes to 1 hour until done, then serve on a platter.
