First make white Upma: Heat a kadhai. Add ghee. Pop mustard seeds, both the dals, curry leaves, red dry chillies, hing and fry well. Then add onions and saute well till aromatic.

Then add boiling water and let it simmer for 2 minutes. Add salt, chill powder, sugar and stir well. Then slowly when water is boiling, add the semolina and mix while mixing. Break all the lumps and cover with a lid.

Cook for 8 to 10 minutes on a slow flame. Mix in lemon juice at the end. Adjust the spices.Then turn off the heat and let it set for 10 mins.
Male 3 parts of the Upma. Keep one part plain white. - 4
Make the green puree by blending mint, coriander leaves, salt, ice cubes, oil and green chillies. Blend to a smooth paste. Then mix this into one part and add boiled green peas. Combine well to make it completely green.

Make the orange puree now. First, steam the carrots in the microwave for 3 minutes on high. Then cool and blend with salt and red chilli powder to a smooth paste. Mix this into the third part and combine well to make it completely orange.

To serve, take a serving plate. Arrange the Orange Upma on top. Then arrange the white below it by pressing well with a spoon. Then arrange the green upma at base. Garnish around the border with fine besan Sev and chopped coriander leaves. Happy independence day to all! 🇮🇳🇮🇳
