Easy Malaysian Shrimp Noodle Soup

This recipe uses both Guanmiao noodles and flat rice noodles, so you can enjoy the best of both worlds.
Easy Malaysian Shrimp Noodle Soup

This recipe uses both Guanmiao noodles and flat rice noodles, so you can enjoy the best of both worlds.

Prepare the ingredients. Peel and slice the ginger. Peel and smash the garlic. Wash and chop the green onions. Cut the hard-boiled eggs in half.

Peel the shrimp, then cut along the back to remove the vein. Pat the shrimp dry with paper towels. Reserve some of the shrimp shells, wash and dry them for later use.

Mix the salt and white pepper together.

Rub the shrimp evenly with the salt and pepper mixture.

Pan-fry the shrimp on both sides until they turn color, then set aside.

Bring a pot of water to a boil. Cook the Guanmiao noodles and flat rice noodles, then divide them between serving bowls.

Blanch the spinach and bean sprouts in the boiling water.

Heat a dry pan and add the shrimp shells. Once dry, add 1 tablespoon vegetable oil and fry the shells until fragrant.

Add the ginger slices, garlic, and cherry tomatoes to the pan and stir-fry.

In a soup pot, sauté the ground pork until fragrant. Add the ingredients from step 9, stir-fry briefly, then add enough water to fill half the pot. Simmer for 15 minutes. Remove the shrimp shells and tomato skins.

You can add meatballs if you like. Pour the hot soup and toppings into the bowls, and sprinkle with chopped green onions.

The soup is flavorful, and the noodles and rice noodles are perfectly chewy—delicious!

[Tips]
* To prepare dried flat rice noodles: Soak in warm water for 60 minutes, drain, then cook in boiling water for 2-3 minutes. Rinse with cold water, then add to the bowl and pour hot soup over them.
* You can add some crushed peanuts to the soup for extra flavor.
