Olive oil is the integral part of mediterranian cuisine; Olive oil especially extra virgin cold pressed olive oil has good monosaturated fat, polyphenols, anti oxidants. Extra virgin olive oil is a great source of antioxidant compounds, like vitamin E, oleacein, and oleocanthal. It may help prevent heart disease, promote brain function, and protect against certain types of cancer. Avocado is equally good, heart healthy, digestive health, eye health, weight loss and etc. Greek yogurt contains many nutrients such as protein, probiotics, vitamin B12, riboflavin, selenium, calcium, phosphorus, zinc, pantothenic acid, vitamin A, and potassium. It may benefit bone health, support gut health, muscle recovery and healthy body composition, improve heart health, decrease the risk of diabetes type 2.

Prepare achecklist keep all ingredients within reach.
Cut avocado in half, remove seed. Use spoon to scoop flesh into food processor.
Soak 1 1/2 c chickpeas with 4c water in a bowl for 2-3 hours, cook in a pressure cooker until soft. Drian off the liquid. keep aside.
Alternatively you may use canned chickpeas, drain the liquid, rinse and use.
Soak cashews in 1/2c f hot water for 20 minutes, drain keep aside - 2
Add all ingredients to a food processor/blender. Blend until smooth, scraping down sides as required

Adjust: sour with lemon, salt, pepper, and dip consistency. Whizz again. Transfer to a serving bowl. Garnish with a few chickpeas, olive oil, cilantro, chopped nuts. Sky is the limit for your imagination.
4. Want to be artistic!You may Dollop the hummus onto plate. Use spoon to make swirls on top. Drizzle over olive oil, sprinkle chopped nuts. Garnish with coriander. I am not really that artistic. You try - 4
5. Serve with chips, crackers or pita bread, I made a sandwich by spreading the hummus on whole grain bread slices. Tasted great

Tips:
Use quality extra virgin olive oil. It may be expensive, When it comes to your health do not be stingy.You can use homemade curd. If using buy good quality Greek yogurt
you may serve the hummus as dip also. Dip the raw veggies and enjoy
