Ingredients

  • 8 ozandouille sausages, sliced in 1/4” rounds
  • 1small yellow onion, diced
  • 1/2 headcabbage, shredded (I use 1/2 bag of shredded coleslaw with carrots)
  • 1/4 tspcrushed red pepper
  • 2 clovesgarlic, minced
  • 3 tbspapple cider vinegar
  • 1 tbspbutter
  • 1small tart apple, cored and diced
  • 1large scallion, diced
  • 1 tsphot sauce (I use Tiger sauce), plus more for serving to taste

Steps

    Heat a large skillet over medium-high heat. Add 2 tbsp olive oil. Add the sausages in a single layer and cooked until browned, 2-3 mins. Flip and repeat on other side. Remove sausages to bowl and set aside.

    Add onion and cook, scraping up browned bits from pan. Cook until starting to brown, 5-7 minutes. Add cabbage, garlic, and crushed red pepper. Salt to taste, and cook until cabbage is crisp tender. If the pan seems dry, add a splash of water.

    Add the cider vinegar and cook for 1 minute, stirring constantly. Stir in the butter, hot sauce, and apple, and return the sausages to the pan. Cook until the apples are warm, 2-3 minutes.

    Serve sprinkled with scallions. Enjoy!
