Papaya is a popular fruit in the Dominican Republic (where it is referred to as lechosa ) and is often made into a "milkshake," which is what we consider a smoothie in the States. The combination of papaya with milk, vanilla, and ice takes advantage of the fruit's fragrance and sweetness, similar to mango but not as tangy. A batida de lechosa will keep you nice and cool on a hot day, and may also become a favorite summer dessert.

Gather the ingredients. Peel large papaya (about 4 cps chopped) using a knife or vegetable peeler.

Cut the papaya in half lengthwise and remove the seeds. Coarsely chop the flesh... place the papaya chunks 1/2 cup milk,3 tbsp freshly squeezed lime juice 1/2 tsp lime zest, granulated sugar,1/2 tsp pure vanilla extract and 1/2 cup crushed ice into a blender or food processor.

Mix on high speed for 20 to 30 second until the mixture is smooth and thick. pour the smoothie into tall frosted glasses. Garnish with tuti fruity/ lime wedges and serve at once...
