  • Non-stick cooking spray
  • 450 gboneless, skinless chicken breasts, cut into bite-size chunks
  • 1/4 cuppineapple juice
  • 3 tbsplow-sodium soy sauce
  • 1/2red bell pepper, cut into bite-size strips
  • 1/2green bell pepper, cut into bite-size strips
  • 2mangos, pitted and cut into bite-size strips
  • Cuptoasted; slivered almonds ground black pepper to taste
  • 1/4 tspground ginger

    Spray a large wok or skillet with non-stick cooking spray.

  2. 2

    Auté chicken over medium-high heat until cooked through, about 10 minutes.

  3. 3

    In a small bowl, stir together pineapple juice, soy sauce, and ginger

  4. 4

    Add sauce and bell pepper to the skillet.

  5. 5

    Cook and stir for about 5 minutes until peppers are crisp-tender.

  6. 6

    Add the mango and almonds to the wok or skillet and cook until hot.

  7. 7

    Season with ground black pepper to taste. Serve with salad
