MANGO CHICKEN STIR-FRY

Ingredients

  1. Non-stick cooking spray
  2. 450 gboneless, skinless chicken breasts, cut into bite-size chunks
  3. 1/4 cuppineapple juice
  4. 3 tbsplow-sodium soy sauce
  5. 1/2red bell pepper, cut into bite-size strips
  6. 1/2green bell pepper, cut into bite-size strips
  7. 2mangos, pitted and cut into bite-size strips
  8. Cuptoasted; slivered almonds ground black pepper to taste
  9. 1/4 tspground ginger

Cooking Instructions

    Spray a large wok or skillet with non-stick cooking spray.

    Auté chicken over medium-high heat until cooked through, about 10 minutes.

    In a small bowl, stir together pineapple juice, soy sauce, and ginger

    Add sauce and bell pepper to the skillet.

    Cook and stir for about 5 minutes until peppers are crisp-tender.

    Add the mango and almonds to the wok or skillet and cook until hot.

    Season with ground black pepper to taste. Serve with salad
