An amazing Salad from Lebanon and Syria that's very healthy and delicious as well. Who can deny the subtle flavours of this amazing Salad that's made with lots of Mint and Parsley. Wholesome goodness of Cracked Wheat at its best. It's a traditional, healthy and a Vegan Mediterranean appetizer made with simple ingredients. It's best served chilled alongside Falafel and Hummus. The name Tabbouleh comes from an Arabic word 'taabil' which means to season. Edible herbs known as qadb formed an essential part of Arabic diet in the Middle ages. Dishes like Tabbouleh affirm their continued popularity in the Middle Eastern cuisine till date. It can also be pronounced as Tabouleh or Tabouli. It's packed with Fiber, complex Carbohydrates and healthy Fats. All in all a great immunity booster Salad that can be enjoyed by all.
In this particular version of an excellent twist, I have used White Quinoa for a change. The rest of the recipe remains as authentic as the original. And I have used it as a healthy Brunch idea on a Sunday forenoon for my family. It was a complete meal. Olive Oil can be added according to one's own choice. It does gives this Salad a lovely flavour. The more it is added, the more flavourful the Salad would be. Though it's a no cook recipe for the original version, this one with Quinoa needs a little bit of cooking. The time depends on the amount of it used. That's it. Let's get started.

Wash quinoa twice or thrice. Soak it in enough water and set aside for an hour. Later cook until soft and done. Set it aside to cool down before proceeding with the rest of the recipe process.

Now comes the mixing part. Just toss in all the chopped ingredients and you are good to go. Add lemon juice and olive oil according to one's own choice.

Serve this tantalizing salad with any main dish or use it all on it's own for a healthy brunch just as i did. And get ready for the umpteen compliments that will follow. Enjoy!
