Easy peasy Mango Mochi by me is so very stretchy and bouncy that you would definitely enjoy it. I have used frozen Chausa Mango cubes that I had stored in the Season only to use it up later. And along with that, I have used whipped cream for an additional add on. I didn't add any extra sugar to it as it was already mildly sweet.
Mochi is a bun shaped Japanese Dessert made from glutinous Rice flour or Mochigome. It has a soft chewy texture that is somewhat elastic. It is often flavoured with Matcha. And originally, Red bean paste is used as a filling which is frozen for best results. And nowadays there have been many versions of Mochi being made by homecooks and chefs too. This one by me is made with sweet and beautiful coloured Chausa Mangoes that are a popular variety here in India.

In a microwave safe bowl, combine the glutinous rice flour and the sugar. Please ensure that the sugar is evenly distributed.

Now gradually pour in the milk while stirring continuously. Stir until the mixture is smooth and free of any lumps whatsoever. Cover and microwave on a high for just about 1 minute.

Carefully remove the bowl and stir the mixture thoroughly. Return the bowl back to the microwave and cook for 1 more minute. Once cooked the mixture should be thick and sticky.

Wearing the gloves or with oiled hands, start kneading it until it's super smooth and stretchy. Divide the mochi into 10 balls. Dust each ball with a light coating of the cornstarch and roll.

Add mango cubes and whipped cream in each small rolled out disc. Gather it up from all the corners and bring it into the centre to form a round big ball. Press it slightly and place it upside down in a muffin liner. Follow the same for all.

Serve it right away. Enjoy!
