It's a hybrid Citrus that's a cross between Mandarin Orange and a common Lime. It has a floral and a earthy aroma similar to that of a Lime but with a unique flavour. It is used in culinary purposes like marinades, dressings and Desserts.
The best part is that it's available aplenty and throughout the Year nowadays without any difficulty. And that's really a good thing about it. It has a juicy texture with a thicker skin that's Green. Not only the flavour but the distinct aroma of it makes it a household name in Bengal where it reigns supreme in the kitchens. In English it's known as Emperor Lemon. Lemon Rice, Lemon Poha, Lemon Cake, Lemon juice, Lemon Mocktail, Lemonade, Slushie, Lemon Chicken, Lemon Fish etc are some of the dishes or recipes that can be made and relished with Gondhoraj Lebu.

Steps
- 1
Wash the gondhoraj lebu or lemons at first. Pat dry. Cut them into two halves. Squeeze the juice out of them either with a manual juicer or a citrus press.
- 2
Add the juice to a pitcher along with water. Stir in sugar and top with some ice-cubes too.
- 3
Mix well and serve it right away or super chilled after refrigeration for a few minutes, whichever is convenient. Enjoy!
