Tomato Jalapeno Chipotle Sauce

I was looking for an easy sauce to put on chicken Milanese and I came up with this recipe. Very flavorful with some heat. You won’t be disappointed.

I was looking for an easy sauce to put on chicken Milanese and I came up with this recipe. Very flavorful with some heat. You won’t be disappointed.

Core out stems from tomatoes and jalapenos. Spray the bottom of a baking pan and add in the tomatoes, jalapeños, onion, and garlic. You can also cut the tomatoes and jalapenos in half for more charring if you like. Place pan in oven and broil to char the vegetables, about 6-8 minutes. Turn vegetables over and broil another 6-8 minutes until you get a char on the other side. Keep an eye on the garlic. You probably have to remove it early to prevent burning.

Remove baking pan from the oven. When cool enough to handle peel off the skins from tomatoes and jalapeños if you want. Add vegetables, garlic, chipotle chile, salt, pepper, and basil to a blender. Pour any liquid from the baking pan into the blender. Blend to desired consistency. Taste and adjust with chipotle chile, salt or pepper as needed.

I mixed some of the sauce with pasta. I then plated the pasta, put the chicken Milanese on top, and then poured some sauce over the chicken. I then garnished with grated cheese and basil. I served the extra sauce on the side. Enjoy!
