Warm Salad with Baked Veggies and Goat Cheese

Ingredients

3 servings
  1. 4Bell peppers
  2. 600 gzucchini
  3. 1 tbspolive oil
  4. 180 gquinoa
  5. 120 ggoat cheese (for 3 meals)
  6. 1 bunchparsley (for 3 meals)
  7. 1 pinchblack pepper
  8. 1 pinchsalt

Cooking Instructions

    Cut vegetables (I added broccoli as well because zucchini was not enough). Sprinkle with olive oil and bake for 30 mins until soft.

    Cook quinoa. 1:2 quinoa to water. 12-15 minutes.

    In the plate Mix quinoa with veggies and goat cheese. Add salt and pepper. Add parsley.
