Ingredients

3 servings

4Bell peppers
600 gzucchini
1 tbspolive oil
180 gquinoa
120 ggoat cheese (for 3 meals)
1 bunchparsley (for 3 meals)
1 pinchblack pepper
1 pinchsalt
Oregano and smoked paprika (optional)

Steps

Cut vegetables (I added broccoli as well because zucchini was not enough). Sprinkle with olive oil and bake for 30 mins until soft.

Cook quinoa. 1:2 quinoa to water. 12-15 minutes.

In the plate Mix quinoa with veggies and goat cheese. Add salt and pepper. Add parsley.
