I’ll be honest: when I saw this recipe, I had my doubts. But, I was morbidly curious and so I forged ahead anyway. And you know what? It’s actually pretty good! 👍🏼
This recipe comes from the OldRecipes subreddit, which continues to be a source of fascination for me. I modified it slightly from the version that was posted there (and which dates to 1981). It reminds me of a meatless version of Salisbury steak. It’s easy, cheap, has lots of protein, and is tasty, so I’ll definitely make it again.

Gather the ingredients.
I decided to also add garlic and Worcestershire sauce, but these are not pictured. - 2
Place the cottage cheese in a fine sieve to drain. I allowed it to drain in the fridge for about 30 minutes while I prepared the other ingredients.

Grate the onion. Place it into a fine sieve to drain for a few minutes.

Gently beat the eggs.

Finely chop the walnuts.

Into the bowl with the eggs, add the cottage cheese, onion, walnuts, breadcrumbs, minced garlic, salt, and Worcestershire sauce.
Mix well, then let sit for 5 minutes so the liquid gets absorbed a little.At this point, preheat the oven to 350°F.

Form nine patties.

This step is optional: in a skillet, melt half a Tablespoon of unsalted butter over medium-low heat. Fry four patties for about two minutes on each side or until golden brown.
Transfer the cooked patties to a clean plate, and repeat the process for the remaining five patties. - 9
In a bowl, prepare the soup according to the directions on the can. That is, combine the can of soup with one can of water or milk. I used milk because I prefer the flavor. Whisk well.

Transfer the patties to a 9x13” pan (or a casserole dish). Pour the soup mixture over the patties.

Bake in the preheated oven 20 to 25 minutes, or until the soup is bubbling. Serve hot.
