Ingredients

60 minutes
3 or 4 people
  1. 2-3 poundButternut Squash halved and cubed and seeds removed
  2. 1Onion-chopped
  3. clovesGarlic-8 Smash in Morter
  4. Ginger grated
  5. Green Onions (Scallions)
  6. 1Apple cut to pieces remove the seeds
  7. 1 stalkChopped celery
  8. 1Chopped carrot
  9. 2-3cupsVegetable or homemade stock
  10. Salt
  11. Black pepper
  12. Maple Syrup about a spoon full or two
  13. SpoonfulCumin where it is in the background not too much
  14. About a spoonful of Brown Sugar
  15. Herb de Provence seasoning

Cooking Instructions

60 minutes
  1. 1

    Peel and Cube the Butternut squash

  2. 2

    Sauté some onion caramelize in large pot

  3. 3

    Add garlic

  4. 4

    Add some ginger

  5. 5

    Add the chopped carrot

  6. 6

    Add the sliced celery

  7. 7

    Add the cubed apple--brand of choice

  8. 8

    Add the Herb De Provence and seasonings of choice such as Salt, Pepper and Adobe Seasoning

  9. 9

    Add the Vegetable Stock

  10. 10

    Boil the cook on medium heat for about 45 minutes to an hour

  11. 11

    Add the maple syrup

  12. 12

    Stirring throughout cooking until vegetables are soft

  13. 13

    Add the brown sugar

  14. 14

    Add some Nutmeg a spoon or so

  15. 15

    Stop the heat

  16. 16

    Blend with an Immersion Blender

  17. 17

    Roast the Butternut Squash seeds in oven with salt

  18. 18

    Serve the soup in Bowl and add a few Roasted seeds if desired and add some chopped scallions

    Taste throughout cooking to season with salt accordingly

    If too thick add some stock or coconut milk

  20. 20

    Warm up with this Fall/Winter soup and Enjoy!
