Ingredients

  • 2medium red or yellow potatos, peeled
  • 2wooden or metal skewers
  • 2 tablespoonsmelted salted butter
  • 1/2 cupfresh grated romano cheese
  • 1/2 teaspoonsriracha seasoning salt
  • 1/4 teaspoonblack pepper
  • 1/4 teaspoonweber BBQ seasoning
  • 1/4 teaspoongranulated garlic
  • 1 teaspoongranulated sugar
  • 2green onuions, sliced for garnish
  • sour cream and ketcup as needed for dipping g

Steps

  1. 1

    Preheat the oven to 425. Line a 9 inche cake pan completely woth foil. Soak wooden skewers for 30 minutes in water

  2. 2

    On your work surface carefully insert skewer in center otpf each potato

    With a sharp thin knife make circular slices around potato

    Carefully fan potato out

    Brush all over with melted butter

    Place on prepared pan with skewers extending over ends of pan. Bake about 25 to 35 minutes, turning once until tender and have crisp edges

    Meanwhile in a bowl combine romano cheese with seasonings

    Remove potatoes from the oven, sprinkle all over with seasoning and return to the oven for 5 motte minutes. Sprinkle with green o ions. Serve hot wire sour cream and ketcup

“Fenway” passed away on 2/3/2021. For the last year she tried to teach her husband of 42 years how to cook like her. Although I will never be as good of a cook as her she did pass on her passion for cooking. Therefore, I will attempt to carry on her legacy and maintain/update her site. My wife was a Registered Nurse, a licensed deep water aerobics instructor, a mother to our 2 children and a fantastic cook. We grew up in New England but have been fortunate to live all over the US. I am now retired, missing her terribly, but thankful for all the years we had together and all her cooking lessons.
