Ingredients

  • Dressing:
  • 1/2 cupolive oil
  • 1/4 cupapple cider vinegar
  • 1/4mayo
  • 2 Tbsspicy mustard
  • 2 Tbssugar
  • to tasteS&P
  • Salad:
  • 2 cupscooked macaroni
  • 1 lbfrozen broccoli
  • 1 packagematchstick carrots
  • 2tomatoes, chopped
  • 1 cansliced black olives, drained
  • 2 Tbsminced garlic
  • 2 Tbschia seeds
  • 1 cupsunflower seed kernels
  • 1medium onion, diced
  • 2 cupscrumbled feta
  • 6 piecescooked bacon, crumbled

Steps

  1. 1

    Cook macaroni according to package.

  2. 2

    While pasta cooks, add all dressing ingredients and whisk together

  3. 3

    In the last 5 minutes of cooking, add broccoli and carrots to boiling water.

  4. 4

    Cook until pasta is al dente

  5. 5

    Rinse pasta and veggies until very cool. Add to dressing.

  6. 6

    Add all other ingredients and mix thoroughly.

  7. 7

    Refrigerate over night.

Started cooking/baking with Gram just as soon as I was old enough to stand in a chair, with her apron tied around my chest. Made my first solo Thanksgiving meal at age 8. Putting a new flair on classic nothern New England style cooking.
