In Mexico, golden tacos with various fillings are called quesadillas. Here, I present a vegan version of fish quesadillas, made with chickpeas and nori seaweed.

In Mexico, golden tacos with various fillings are called quesadillas. Here, I present a vegan version of fish quesadillas, made with chickpeas and nori seaweed.
Cooking Instructions

Add all ingredients, except the tortillas and olive oil, into a blender or food processor. Process until the chickpeas are ground.

Turn off the processor or blender. Use a silicone spatula to scrape down the sides of the processor or blender.

Process once more to achieve a better mix.

In a skillet, pour 1 tablespoon of olive oil and heat. Add the chickpea mixture and cook on low heat to cook the raw ingredients.

Place 2 tablespoons of the chickpea paste in the center of a soft tortilla and fold in half, distributing the fish imitation that was just cooked. Set aside. Repeat until the chickpea paste is used up.

In a skillet, pour enough olive oil to fry the quesadillas. Place on paper towels to remove excess oil.

Serve with pico de gallo salsa or chopped romaine lettuce. Add avocado slices.

In the photo, a salad made with tomatoes, yellow bell pepper, and green chili, chopped, seeded, and deveined, was added. Now, enjoy.

A few notes: Very important to use key lime juice, not regular lime juice. Different flavor. Also coarse salt of any variety except maybe not sea salt; too mild. In hindsight, mushrooms would have probably been great in this, leftover corn, tomato, black beans, or any sort of meat you have leftover..
