These are the best. Sweet AF but amazing. Use Meyer lemons for unique or regular for boring.
Cooking Instructions

Preheat to 350 and find your 9*13 pan and line that baby with parchment paper.
Make the shortbread Crust by sifting together the dry ingredients and then Mix in the butter and extract in with a mixer until just combined.

Press your shortbread into the pan to a thinish layer about 1/2 in. Bake it for 20min until you start thinking about Scottish accents.

While baking let's make lemon goo. Whisk together zest and the sugar ideally with a food processor and if time crushed then I just whisk it in the ol' kitchen aid.

Add the flour to your mixer (and the sugar if you processed it like a boss). Add the juice, extract, and eggs. Mix it phenomenally.

Pour over the hot shortbread when done. Spread it out if needed. Bake it for another 25min. When done, dust it with some more powdered sugar and maybe some zest.
Enjoy! Best if you let them sit a night if your will power allows.
