1. In a pot coated with spray oil, cook your cut chicken thighs & minced garlic.
2. Add in your nappa cabbage, chicken broth, and water and let it boil.
3. Add in your soy sauce, miso paste, sliced cabbage, mushrooms salt, pepper, green onions, onion powder, and sesame oil.
4. In another pot, cook your udon noodles and transfer the cooked noodles into cold water.
5. Add your cooked noodles into the udon soup and enjoy!

I made curry noodle soup in a clay pot.It's a sister to the stewed miso udon noodles.Please adjust the amount of dashi base according to the size of your clay pot. You can use pork or onions instead of chicken. The egg will be cooked with remaining heat so take the pot from the heat shortly after you cover the pot.
