My mother is a cancer survivor. Last year, at the age of 85 yrs. she was diagnosed breast cancer. At such age it was only possible due to her awareness. As soon as she noticed some discharge, she informed the fmly. And we promptly decided for surgery.
I would like to share with my fellow authors this motivating fact, and pass message to stay aware and never to panic. We Gujaratis believe in a proverb - "Chetato nar sada sukhi" - means "An awared person is always happy".
Here I have used Beetroot - packed with antioxidants and fibres, possessing elements that fight against cancer. And many colourful veggies.

Steps

Assemble all the ingredients. Add grated half beetroot and some water to a mixie and make a fine puree.

To a pan add half of ghee and oil and add mustard seeds, udad dal and curry leaves. After dal turns golden, add vermicelli, cahews and raisins and roast till it turns pink. Keep it aside.

Take the remaining ghee and oil in a pan and saute all the veggies. Add chilli ginger paste and mix well. Also add roasted vermicelli.

Mix veggies well with vermicelli. Add the beetroot puree at this stage. Also add needed water. Let it cook on medium flame.

Cook till the seviya is soft. Add lemon juice. Serve it hot and enjoy naturally coloured pink vermicelli upma, fully loaded with colored veggies.
