No Bake Chocolate Peanut Butter Cheesecake

Ingredients

  1. Crust
  2. 2 cupschocolate graham crackers crushed fine
  3. 1 stickbutter melted
  4. Cheesecake
  5. 1 cupchopped chocolate
  6. 1 1/2 cupsheavy whipping cream
  7. 3 (8 ounce)pkgs cream cheese softened
  8. 1 3/4 cupconfectioners powdered sugar
  9. 1/4 cupcreamy peanut butter
  10. 1 teaspoonvanilla extract
  11. Garnish
  12. If desired top with your choice chopped nuts, chopped chocolate, whipped cream, crushed cookies

Cooking Instructions

refrigerate 8 hours

    Combine crumbs and melted butter for crust. Press firmly into bottom of a 9inch springform pan.

    In a medium bowl, combine chocolate and 1/2 cup heavy cream. Melt in microwave in 20-30 seconds intervals stirring well each time. Set aside to cool slightly.

    In a large bowl, beat cream cheese until smooth. Add confectioners sugar, peanut butter and vanilla, beat on high speed 2 -3 minutes until smooth and fluffy. Add chocolate mixture and beat until combined.

    In a separate bowl beat remaining cream until stiff peaks form then fold into the cream cheese mixture with a spatula or beat on low speed.

    Spread into prepared crust and refrigerate at least 8 hours.

    Add garnish if desired and serve. Store in refrigerator.
