Assemble ingredients, soak Rice for 2 hours.

Boil Soya Chunks in sufficient water and then squeeze excess water.
Marinade boiled soya nuggets with 1/2 tsp Salt, red chilli powder, Coriander powder, Cumin powder.
Marinade for 30 minutes. - 3
In a moderately heated pan, add 1 tbsp ghee + 2 tbsp Oil, add cumin seeds + bay leaf + cardamom + cloves + cinnamon and allow to crackle and spices turn aromatic. Add onion and sauté till pinkish. Add ginger and sauté for a few seconds.

Add all veggies except green peas and stir fry by adding slight salt, sauté for 3-4 minutes.

Then add marinaded soya chunks and sauté for around 5-6 minutes under medium flame.

Add rice and sauté very gently for 2-3 minutes.

Add 4 cups hot water, mix well, add salt, cook under medium flame for 4-5 minutes, water is soaked by rice. Add Green Peas at this stage.

Now lower flame, add more water (as required) + sugar, cover and cook for 4-5 minutes, by now rice is cooked and turns soft.

Keep stirring in between. Lastly add 1 tbsp ghee, mix well, cover it. Add fried Cashews and soaked Raisins.
Simmer for 2-3 minutes and switch off flame. - 10
Keep in stand by mode for 2-3 minutes and dish is done.
