I'm making breakfast and wanted to share an easy recipe for sunny-side up eggs. A few months ago, I made this with my brother and he said, "I just learned another way to make sunny-side up eggs." That made me think of sharing it here with you.

I'm making breakfast and wanted to share an easy recipe for sunny-side up eggs. A few months ago, I made this with my brother and he said, "I just learned another way to make sunny-side up eggs." That made me think of sharing it here with you.

Melt a small piece of margarine in a skillet.

Once melted, add the sofrito and a splash of water, then mix.

Use as many eggs as you need for the number of people eating—usually one per person. Here, I'm making two.

Cover and cook over low heat for 3 to 4 minutes.

After that time, check and spoon some of the sauce over the eggs for extra flavor.

As I mentioned, I'm making this for breakfast and serving the sunny-side up eggs in sofrito with refried beans and pork ham.
