Chhash is a delicious, healthy and cooling summer drink. Ayurveda recommends very watery chhash (¼ : ¾) and must be consumed in the afternoon only. It must not be consumed at night as well as in winter or monsoon.
I like creamy and a little thick (½ : ½) chhash. I have special childhood memory attached to chhash. My pappa used to make me the chhash just how I like, and keep it in the fridge protecting from the rest of the family members. As I return from school, he will sweetly welcome me with a glass of my delicious chhash. I used to enjoy every sip of it while having my 'me' time with the newspaper. Love ypu pappa ❤️

Take curd in a pot. Blend with a blender till it gets creamy. You need to blend for about 2-3 minutes.

Add water. It will look frothy as Keep it refrigerated till the time of use.

Add masalo only at the time of consuming.

You may also grind a little coriendar leaves, ginger, green chillies, salt, sanchal(optional) and fresh mint leaves in some water to make paste and add it in chhash INSTEAD OF chhash masalo.

Tips: 1. The curd must be thick, creamy and mild. 2. Blending the curd using a blender or valoni (the traditional whisk) is very important to male frothy and creamy chhash.
