I made paneer tikka curry using colorful bell peppers. It looks as attractive as it tastes.

Wash and finely chop the tomatoes. Finely chop the onions and garlic as well.

In a bowl, mix yogurt with red chili powder, turmeric, coriander powder, and chaat masala. Add the paneer cubes and mix well. Let it marinate for 20 minutes. Then grill or roast the paneer on a griddle or skillet.

Cut the yellow, green, and red bell peppers into chunks. In a pan, melt the butter, then add cumin seeds and asafoetida. Add bay leaf, cloves, and cardamom, and sauté. Add cashews and sauté. Add the chopped tomatoes and mix. Add red chili powder, turmeric, and coriander powder, then mix again. Add salt. Cook for 15 minutes. Turn off the heat and let it cool. Transfer to a blender jar and blend to a smooth paste. Strain the gravy.

Pour the gravy back into the pan. Add the bell peppers and dried fenugreek leaves. Mix well. Add the grilled paneer. Your hot paneer tikka curry is ready.
