This is sweet, salty, creamy and crunchy and really hits the spot. I regularly make it to pack for my lunches during the week.

Cook the chicken and shred it however works best for you. (I cook in an instant pot on high pressure for about 12 minutes then do a quick release, and shred it using a stand mixer ☺️)

Once chicken is somewhat cooled, mix together the rest of the ingredients and try not to eat it all before you put it away! (I usually put on a pair of disposable gloves and mix it by hand.)

Make sure to store in the refrigerator and we like to eat it with some saltines or on a wrap!
