Gulgule are a traditional Indian sweet dumpling, often made for festive occasions and celebrations. Today, I’ve made them in an appe pan, which makes them soft, lacy, and delicious, using very little oil. They’re easy to make with basic pantry ingredients. For a decorative touch, I’ve added white sesame seeds, but you can skip them if you prefer.

Ingredients

  1. 1 1/3 cupswhole wheat flour (about 170 grams)
  2. 2 tablespoonsshredded coconut (about 15 grams)
  3. 3/4 cuppowdered sugar, or to taste (about 90 grams)
  4. 1 teaspoonfennel seeds
  5. 1/2 teaspoonground green cardamom
  6. 2 teaspoonsghee or cooking oil (for the batter) (about 10 grams)
  7. 1/3 teaspoonfruit salt (Eno)
  8. 1-2 teaspoonswhite sesame seeds
  9. About 2 tablespoons ghee (for cooking) (about 28 grams)

Steps

  1. 1

    Place the whole wheat flour in a large mixing bowl.

    Add the fennel seeds and powdered sugar.

    Add the shredded coconut, ghee (for the batter), and ground cardamom. Gradually add water and mix to make a batter. The batter should be neither too thin nor too thick.

    Add the fruit salt (Eno), then sprinkle 1 teaspoon water over it to activate. Beat the batter well. Add 3 drops of ghee to each cavity of the appe pan and heat it on the stove. Sprinkle a little white sesame seed into each cavity (optional).

    Spoon 1 tablespoon of batter into each cavity. Cover and cook on low heat for 2 minutes until the dumplings are cooked through. Flip and cook until golden and fully cooked.

    Repeat with the remaining batter. Gulgule made in the appe pan turn out very soft and lacy.

    You can store the gulgule in an airtight container.
