Roasted Gram or Chana Daal or Putana Daal fermented Dosas made to perfection with a crisp texture by me are to die for. These turned out so very crisp and absolutely flavourful. The best part is that these can also be made instantly. But I always prefer fermentation for Dosas or Idlis. Otherwise if desired these can be made without having to go through the actual process of fermentation. Not only that, these have so very well spread and cooked to crisp crust and texture. My family just loved these for Breakfast the other day.
Not only these look so beautiful inside out, these are super healthy too. With Roasted Gram, it actually becomes a way lot healthier and nutritious. Any Vegetable or Green Vegetables can be added to the batter to make these more healthier and wholesome.

Wash and soak both rice and roasted gram for about 2-3 hours. Soaking time is considerably reduced here because of roasted gram. Rice only needs a little bit of soaking. That's it. Therefore I have soaked them for about 2-3 hours to facilitate easy grinding.

Grind them both with the rest of the ingredients as mentioned except salt. Grind to a smooth batter and allow it to ferment overnight with a lid on.

Next morning, stir in some salt according to taste and adjust the batter with a little water. Mix and it's all ready to be used. Using a medium sized ladle or a ladle of your choice, spread the batter on the hot tawa or griddle in a clockwise manner. Keep the flame on a medium to a high taking care not to burn it. Before spreading the dosas, sprinkle some water and wipe it with a paper napkin. It is important to bring the temperature to a normal for the dosas to come out right.

Drizzle oil or ghee on the sides and some on the top of the dosas. Cook until golden brown and crisp. Follow the same for all the dosas.

Serve them piping hot with aloo masala and chutney as well as sambar. Enjoy!
