BBQ Pulled Pork Sandwich

Easy to prepare in the oven, in lieu of using an outdoor smoker. However, an outdoor grill to start the pork cooking process is key to get a slight smoked taste. This meal yields enough for a small group gathering.

Easy to prepare in the oven, in lieu of using an outdoor smoker. However, an outdoor grill to start the pork cooking process is key to get a slight smoked taste. This meal yields enough for a small group gathering.
Steps
- 1
Prepare the pork (trim fat, remove rind). Cover the meat with dry rub seasonings and place in the refrigerator for 1 hour (covered).
- 2
Use an outdoor grill and add wood chips for smoking when grilling the meat. Sear on all sides for 5-6 minutes. Or if indoors, use a large frying pan with oil and sear in the pan.
- 3
Heat oven to 300˚. Transfer the meat to a large pot with lid (oven proof) and add the onion, braising liquid ingredients, and seasonings. Cover and place in the oven to slow cook for 3.5 hours.
- 4
When done cooking, carefully remove the meat from the pan and place on a large cutting board surface. Allow to cool and then shred using two forks. Lightly chop large pieces crosswise.
- 5
Place the shredded pork in a casserole pan with reserved pan juices (1/2 cup), lightly top with BBQ sauce, cover with foil and place back into the now cooling oven for 10 minutes.
- 6
Remove from oven and lightly mix the pork. Place the pork on open buns / rolls and top with other favorite toppings (slaw, pickle, etc.) and enjoy.
