Gujarati's most favourite breakfast or as a dinner during winter season is Methi palakgota or bhajiya.
Steps

Wash chopped spinach, methi leaves, green coriander and green garlic.

Take 1.5 Cup water 1/4cup oil in a bowl.

Add crushed coriander seeds, black pepper.

Add chopped green chillies and grated ginger, asafoetida, salt, sesame seeds.

Add ajwain, turmeric powder, cooking soda and stir with whisker in a same direction for 2 minutes.

Add bhajiya besan, mix it well. Add washed methi leaves, spinach, green coriander and green garlic.

Give a nice mix, Heat oil in a kadai, put bhajiya with hand on medium high flame. Check bhajiya should be proper cooked, flip bhajiya, remove from kadai.

Serve hot spinach methi leaves bhajiya with green chutney or curd.
