Ingredients

30 minutes boil, 30 minute bake
2 people, 4 soufflé portions
  • 2 poundsrusset potatoes, scrubbed, peel on, cubed
  • 1 cupheavy whipping cream, 40%, whipped
  • 1/2 cupsoft mexican cheese, grated
  • 1/4 cupbutter, melted
  • 3fresh large farm eggs, egg whites whipped
  • 2 Tspblack truffle powder
  • 1 TspFlaked seasalt
  • Equipment: 1 oven baking dish, whisk, pan, fork
  • Cost: heavy cream $1.25, cheese $1.20, butter 40 cents, potatoes $1.00, eggs 60 cents, other 10 cents, per potato soufflé portion $1.11

Steps

30 minutes boil, 30 minute bake
  1. 1

    Cube scrubbed potatoes, peel on, bring to boil in cold salted water, boil about 20 minutes till soft. Drain, put in glass bowl, butter on top and let melt.

    Mash potatoes with melted butter with fork or potato masher, add eggyokes, truffle powder, salt, and grated cheese.

    Whip eggwhites till stiff, whip heavy cream till stiff, fluff up potato mix by folding in the whipped eggwhites and whipped cream till light and airy.

    Put in oven baking dish and bake in preheated 450F degree oven till mix puffs up (souffle in french) and golden crust develops, about 30 minutes. Cut in pie shaped pieces, serve. Enjoy.
