Roast peanuts, remove peels and run them in a chilli cutter to get a nice crush. Boil and peel potatoes. Grate them and knead a bit.

Combine sabudana, ginger chilli paste and cumin seeds well asif kneading dough. Add crushed peanuts, chilli powder, sugar, salt, potatoes and lemon juice. Combine everything very well.

Make balls from the mixture. Make them a bit flat like pattis. Dip-fry them. In case the start to break in the oil, you need to umadd shingoda flour/araroot powder/Cassava flour in it. If you fry them at the right temperature it will not break nor will it get oily.

The oil should be moderately hot, but not at smoking point.keep the flame high at the time of sliding them in. Then reduce it at medium to high. Don't touch them for the first 1-2 min. Flip them then after. Flip often till you get golden brown. They will feel crunchy at the outer layer and soft inside. Let the oil heat up in between the batches. Do not fry too many at a time. Fry 1 first because usually the first one sticks to the pan. Allow the stuck one fry thoroughly before flipping.
