Combine green chillies and ginger and cook it in ½ cup of water till the colour of the chillies get dark. Sieve it and use that water to knead the dough for sev. You will not need more that 2 tbsp water for the dough.

Combine the rest of the ingredients and knead well. Also add the chilli water and knead. At the end, pour about 1 tsp oil and knead to Smoothen the dough. Apply will inside the sev mould as well as on the disc.

Put a lump of dough in the mould, close it well and drop sev in moderately hot oil. Cook sev on both the sides on medium to high heat. However, do not flip the first side until they get sturdy a bit enough to flip easily. Fry till they are crisp on both the sides.

Allow them to cool and them store in an airtight container.
