Assemble ingredients

Finely chop Methi leaves. In pan add 1 tbsp ghee, fry / sauté chopped Methi by adding little salt and fry till water evaporates, it takes around 10 minutes.

In pan add 1 tbsp ghee, add chopped onion + green chilli and sauté till pinkish or translucent, then add ginger + cashews and sauté for 3-4 minutes. Add 1/2 cup water and simmer / cook for 4 - 5 minutes and let it cool.

Now grind it to a smooth paste by adding slight water.
In pan add 1 tbsp ghee / oil, add all whole spices, let them crackle and then add the smooth paste + 4 tbsp water. Add coriander powder + salt and cook for 2-3 minutes. - 5
Sauté till water evaporates and masala turns fragrant.
Now add boiled green peas + sautéd Methi, mix well. Add milk + turmeric powder and cook for 3-4 minutes under cover. - 6
Add garam masala + cream and mix well, also check for salt. Add sugar and Cook for 2-3 minutes, if gravy seems too thick then warm water can be added.

Methi Matar Malai is ready to serve.

Serve with Paratha or any Flat bread.
