Ingredients

  1. 3 lbGround Beef
  2. 1Yellow Onion, diced
  3. 1 (15 oz)can Pinto Beans, drained
  4. 1 (15 oz)can Light Red Kidney Beans, drained
  5. 2 cansDiced Tomatoes
  6. Dried chili, guajillo, japones, etc
  7. 1small can Chipotle Chilis in Adobo
  8. 1 cubeBetter than Bouillon Beef
  9. 1Garlic Clove, peeled
  10. Worchestershire Sauce, to taste
  11. Kosher Salt, to taste
  12. Black Pepper, to taste
  13. RT's Chili Powder, to taste
  14. 1 pinchCinnamon
  15. Cilantro, optional
  16. Cheese, optional
  17. Sour Cream/Crema, optional

Cooking Instructions

    (Prep)
    Add Better than Bouillon to boiling water and dissolve, then simmer until rich and flavorful and set aside.

    Deseed 4-5 guajillos, 6-8 japones (depending on desired heat), and peel 8 cloves of garlic, then boil until soft. Strain, reserving some water, and add to blender cup with chipotle chilis and some of the reserved water. Blend until smooth and set aside.

    (Cooking)
    Brown and season beef in Dutch oven, then strain fat and remove.

    Deglaze pot and sautee onions until lightly-browned. Re-add beef along with blended chili paste, broth, and diced tomatoes until desired consistency is reached. Add worchestershire and season to taste.

    Reduce heat to simmer and add drained beans, then cover and cook for at least 1 hour, stirring occasionally.

    Serve; top with optional ingredients.
