Steps

Pre heat your oven to 200c
In a small rampkin: add your 1 tablespoons of butter, pepper, salt and herbs. leave to one side.
Boil your kettle, pour boiling water onto your whole chicken and transfer the chicken to a clean board. Dry with tissue kitchen towels and using your fingers, carefully lift up the skin on top of the chicken (near the neck) and pull up gently.

Get your premade butter and herb mixture and gently put the butter underneath the skin that you lifted, push the butter all over each breast.
Spray with oil and add some extra herbs and seasonings.

Put the chicken onto your oven proof baking tray upside down and pour over your chicken stock.
Spray and season again
Put into the oven for 30 minutes.

After 30 minutes Take out your chicken flip it, and base it with the chicken stock it was laying in.
(Optional) Add bacon to the top of the chicken and put a loose layer of foil on the top of the chicken.Put the chicken back into the oven and Continue to roast for an hour or until a food thermometer inserted in the thickest part of the breast registers 165 degrees and 175 degrees in the thickest part of the thigh.

For the last 10-20 minutes of roasting, remove the foil and turn the temperature up to 230C for crispy bacon and skin.
