Most of my family members love the amazing amaranth. In fact, I love red amaranth most. Amaranth leaves are rich in fibres and vitamin C. Having fibres in the diet is good for weight loss and control of cholesterol in the blood. Having 100gms of the leaves will meet 70% of our daily requirement of vitamin C. I have added green cholia to make the recipe more delicious and healthy.

Heat oil in a kadhai. Add and allow to crackle mustard seeds. Mix chopped onion and garlic as well as green chillies.

Fry on medium to low heat till we get aromatic garlic and onion.

Now, add chopped tomatoes, the boiled green cholia and fry with amaranth leaves on low heat. Add salt as required.

Mix well all the masala and leafy vegetable. Add 1/3 Tsp lemon juice and a pinch of sugar and mix well. This enhance the taste of the recipe. Serve with hot rice and roti with daal. Thanks
