To Cook the Yam:
• Clean and wash the yam thoroughly. Chop it into long, thin slices.
• In a cooking pot, bring water to a boil. Add yam slices, turmeric powder, tamarind paste, and salt. Cook for 8 minutes until partially tender.
• Drain and set aside. - 2

To Make Yam Fry:
• Heat 2 tbsp coconut oil in a kadai. Add mustard seeds, fennel seeds, and asafoetida. Let them splutter.
• Add crushed garlic, green chilies, and curry leaves. Sauté until aromatic.
• Add the cooked yam slices, mix well, and sauté for 5 minutes with 1 tbsp coconut oil. - 4

Stir in turmeric powder, spicy red chili powder, Kashmiri chili powder, sambar powder, and salt. Mix well and cook on low flame for a few minutes.
• Finish with lemon juice and garnish with coriander leaves. - 8

Transfer to a serving dish and enjoy this flavorful Yam Fry as a side dish with rice or any main course!
