In these perfect Dosas made with Quinoa millet, I have used whole White Quinoa and not the flour. Healthier and yummier, these make for an excellent nutrient rich food for your family. White Quinoa Millet is a great source of important Minerals just like that of Black and Red varieties. It is high in Fiber and Protein. It helps in improving gut health. It also helps a lot in Blood Sugar management. It is high in Magnesium thereby helping in maintaining good Heart health and Blood pressure levels. It is naturally gluten free. It is rich in Antioxidants and contains a wide range of Amino-acids. With many important Minerals like Iron, Calcium, Magnesium, Potassium, Phosphorus etc, it is just perfect. Relish these delicious healthy Dosas by me for a perfect family Breakfast on a weekend or a special holiday.

Ingredients

30-35 minutes
6-7 servings
  1. 2 cupsWhite Quinoa
  2. 3/4 cupBlack Gram or Urad Daal
  3. 1 cupDosa Rice
  4. 1 tspFenugreek seeds
  5. 1 tspSalt
  6. 1/2 cupOil/Ghee (for making Dosas)

Steps

30-35 minutes
  1. 1

    Wash and soak both the quinoa millet and the lentils for a good 6 to 7 hours along with rice. Grind them to a smooth paste using same water in which they were soaked as required. Set aside.

    Allow it to ferment for 4 hours. That's it. It doesn't require overnight fermentation. Stir in some salt according to taste when ready to make dosas. Mix and you are good to go.

    Start making dosas. Heat an iron griddle or a non-stick dosa tawa on a medium high heat. Spread the batter in a clockwise manner in one motion. Cook on a medium high to high heat keeping an eye on it all the while.

    Make dosas effortlessly. Pour a ladleful of the batter on a hot non-stick tawa or a cast iron griddle. Spread in a circular motion to form a thin crisp round shaped dosa. Drizzle oil or ghee on it and cook for about 2 minutes each. Make all in the similar way.

    Serve them piping hot from the griddle to the plate alongside any of your favourite chutneys and potato masala. Enjoy!
