Sauté 1/2 chopped onion, 1/2 chopped green bell pepper, 1 peeled and sliced carrot, and 1 peeled and diced potato in 1 tablespoon of oil.

Add 1 cup of washed lentils, 2 tablespoons of tomato paste (I used Cirio) or you can use tomato puree, season with 2 or 3 teaspoons of powdered bouillon, and cover with water until it is about two fingers above the ingredients.
