These pancakes are a must try. They are a staple from Maharashtra where they are called Mod alelya mugache dhirde. I have added spinach for extra taste and nutrition. These pancakes are rich in protein, iron, calcium, folate, magnesium, dietary fiber and vitamin B and A. They are gluten free , low calorie and low sugar, ideal for a healthy diet.

First, combine the mung sprouts, spices ginger garlic paste, green coriander leaves, and 1/2 cup water. Grind to a smooth paste.

Then transfer to a bowl. Add the flours, mix in more water to make a semi thick batter. Keep to rest for 10 minutes. Lastly add lemon juice, sugar and 1 pinch of cooking soda.

Mix well. Then heat a skillet, pour the batter with a ladle and make round pancakes on a hot griddle.

Cook on both sides till golden and crisp. Sprinkle grated cheese and fold over to melt it. Make all the pancakes similarly.

Enjoy them with fresh curd, chutney, curry, raita or tea and coffee.
