Cheesecake Flan

A sweet treat loved by many, including me and especially my daughter. The flan is soft and melts in your mouth, with a light yellow color because I use farm-fresh eggs. Add some ice cubes and coffee for an irresistible dessert. Enjoy it with your family!

Beat the eggs until well mixed.

Combine 3 tablespoons sweetened condensed milk with the cheese and melt together in a double boiler, stirring until smooth.

Pour the milk into a large bowl, add the remaining sweetened condensed milk, and stir until combined. Strain the beaten eggs into the milk mixture. Strain the melted cheese mixture in as well, and mix everything together.

In a pan, combine the sugar and water. Cook until the sugar dissolves and turns a deep amber color. Add the lemon juice, turn off the heat, and pour the caramel into the molds.

After coating the molds with caramel, pour in the egg and milk mixture. Bake in a water bath or steam for about 30 to 40 minutes until set.

Once the flan is cooked, let it cool and enjoy.
