Heat oil in a dutch oven till shimmering.

Add the beef and sear both sides till brown.

Arrange the vegetables around the beef and pour the broth.

Cover and cook on medium high heat for 3 hours.

Remove the beef and vegetables.

Let it rest for a few minutes before slicing or shredding the beef.
