Ingredients

  • 1/2 cupall-purpose flour (about 65 grams)
  • 1/2 cupcornstarch (about 65 grams)
  • 3eggs
  • 80 gramssugar (about 1/3 cup plus 1 tablespoon)
  • 2 tablespoonsmilk (30 ml)
  • 2 tablespoonsvegetable oil (30 ml)
  • 1 teaspoonvanilla extract
  • 1 pinchsalt
  • 1/2 cupheavy whipping cream (about 120 ml)
  • 3/4 cuppowdered sugar (about 90 grams)
  • 2/3 cupsweetened condensed milk (150 ml)
  • 2/3 cupevaporated milk (150 ml)
  • 2/3 cupwhole milk (150 ml)
  • 3.5 ouncesshredded coconut (100 grams)

Steps

  1. 1

    Beat the egg whites with the sugar until stiff peaks form and the mixture doubles in size.

  2. 2

    Once the mixture is fluffy and firm, add the vanilla, milk, and oil. Beat, then gently fold in the flour and salt until just combined.

  3. 3

    Pour the batter into a greased and floured baking pan. Bake at 350°F (180°C) for 25 minutes.

  4. 4

    After baking, let the cake cool for 20 minutes, then pour the three-milk mixture over the cake.

  5. 5

    Decorate with whipped cream, sprinkle with shredded coconut to taste, and top with cherries.
